Abstract

La fonction critique des images s’incarne de manière privilégiée dans la satire. Si la satire s’est constituée en genre littéraire dès l’Antiquité, avant de gagner les beaux-arts et les arts graphiques à l’âge classique, ce sont les médias modernes – édition, presse, expositions, télévision, internet – qui, en élargissant progressivement sa sphère d’influence, ont renouvelé ses formes et ses objectifs tout en augmentant leur efficacité. Autorisant une diffusion planétaire et presque instantanée des images satiriques, internet et les technologies numériques n’ont pas seulement transformé la matérialité et les moyens d’action de cette imagerie et leurs effets sociopolitiques, ils ont aussi affecté les formes de la recherche sur le satirique en donnant accès de plus en plus rapidement à des corpus extrêmement vastes. La satire est aujourd’hui partout, sans qu’aucun acteur ni canal de diffusion ne puisse prétendre en contrôler ses usages généralisés ni son effectivité. Cette publication regroupe les actes du colloque qui s’est tenu du 25 au 27 juin 2015 à l’Institut national d’histoire de l’art, à Paris, organisé par l’Institut national d’histoire de l’art, l’université du Québec à Montréal et le LARHRA-UMR 5190 du CNRS, avec le soutien de l’Agence universitaire de la Francophonie et le Conseil de recherches en sciences humaines du Canada.

Abstract

The studies collected in this volume reflect, in general, upon food given its extraordinary cultural and identity value. With different approaches to food heritage, whether from a linguistic perspective, or from a more literary or cultural analysis, with a due historical, social and spatial framework, the set of papers highlight the importance of this topic, from classical antiquity up to the present day. In fact, food and everything that goes with it lead us on a journey revealing man’s way of life and his relationship with nature and other living beings. The thirty-four contributions of this volume are gathered in the following chapters: 1. Food: intangible heritage; 2. Food and literary heritage; 3. Food and linguistic heritage; 4. Food: health and wellbeing; 5. Food: society and culture; 6. Food and intercultural dialogue. With this volume it is also intended to open up perspectives on new research areas of food heritage as an essential source of knowledge for today.

Abstract

Kitchen, cooking, nutrition, and eating have become omnipresent cultural topics. They stand at the center of design, gastronomy, nutrition science, and agriculture. Artists have appropriated cooking as an aesthetic practice – in turn, cooks are adapting the staging practices that go with an artistic self-image. This development is accompanied by a philosophy of cooking as a speculative cultural technique. This volume investigates the dimensions of a new culinary turn, combining for the very first time contributions from the theory and practice of cooking.

Abstract

The aim of the Special Issue is to discuss the main current topics concerning marketing for sustainable tourism with reference to territories (i.e., tourism destinations, protected areas, parks and/or natural sites, UNESCO World Heritage Sites, rural regions/areas, etc.) and tourism enterprises and/or organisations (i.e., destination management organisations, hospitality enterprises, restaurant enterprises, cableway companies, travel agencies, etc.). In destinations where natural resources are pull factors for tourism development, the relationships among local actors (public, private, and local community), as well as marketing choices, are essential to develop sustainable tourism products. To this end, the Special Issue encourages papers that analyse marketing strategies adopted by tourism destinations and/or tourism enterprises to avoid overtourism, to manage mass sustainable tourism (as defined by Weaver, 2000), and to encourage and promote sustainable tourism in marginal areas or in territories suffering lack of integration in the tourism offer. Special attention will be given to contributions on the best practices to manage territories and/or enterprises adopting sustainable marketing strategies.
